- For maximum crispness, ensure chicken wings are patted thoroughly dry before seasoning. Toss 1 kilogram (2.2 lbs) of wings with 5 grams (1 teaspoon) of gluten-free baking powder and a pinch of salt to create a drier surface, promoting superior browning and crisping.
- Avoid overcrowding the air fryer basket. Cook wings in a single layer with space between each piece to allow proper air circulation. Overlapping wings will steam instead of crisp. Work in batches as necessary.
- Preheat your air fryer to 200°C (400°F). Cook wings for 20-25 minutes, flipping them halfway through. The internal temperature should reach 74°C (165°F), and the skin should be deeply golden and crisp.
- If saucing, air fry wings until fully cooked and crispy first. Immediately toss the hot wings with your warmed gluten-free sauce. Adding sauce too early can prevent crisping or cause burning.
