Getting Started

  • For whole or halved fresh artichokes, trim tough outer leaves and thorny tips. Soaking halved artichokes in lemon water for 15 minutes before air frying helps prevent browning and keeps them tender.
  • When breading, ensure a light, even coating. A thin layer of plant-based milk followed by well-seasoned panko breadcrumbs works best. Over-coating leads to a doughy texture.
  • A light spray of olive oil or avocado oil is usually sufficient to achieve crispiness. Too much oil can make artichokes soggy and prevent proper browning.
  • Air fry artichokes in a single layer, in batches if necessary, to allow for proper air circulation. Overcrowding results in steaming rather than crisping.
  • For canned or jarred artichoke hearts, air fry at 375°F (190°C) for 15-20 minutes, shaking the basket halfway. Fresh artichoke halves may require 400°F (200°C) for 20-30 minutes, depending on size, until fork-tender.
