Getting Started

  • For maximum crispness and even cooking, arrange bacon in a single layer on a wire rack set over a foil-lined baking sheet. This allows fat to drip away and air to circulate. Bake at 400°F (200°C) for 15-20 minutes, depending on thickness.
  • Always start bacon in a cold oven. As the oven preheats, the fat renders slowly, resulting in more uniformly crisp bacon rather than burnt edges and raw centers.
  • To easily remove excess grease and achieve a drier texture, transfer baked bacon immediately to a plate lined with paper towels after removing from the oven. The residual heat will continue to crisp it slightly.
