Getting Started
- Snap off woody ends of asparagus. For thicker spears, blanch in boiling water for 1-2 minutes, then shock in ice water before grilling; this ensures even cooking without burning.
- Toss asparagus with a high smoke point oil like avocado or grapeseed oil, or quality olive oil, before grilling. Season generously with salt, pepper, and desired herbs or spices. Avoid dairy-based marinades or butter.
- Preheat grill to medium-high (400-450°F / 200-230°C). Grill asparagus directly over heat for 5-8 minutes, turning occasionally, until tender-crisp with visible char marks. Use a grill basket for smaller spears to prevent them from falling through.
- Ensure grill grates are clean and well-oiled before placing asparagus. A light coat of oil on the asparagus itself also helps prevent sticking to the grates.
